Description
A rare and quietly expressive organic single malt, made with deep respect for land, tradition, and provenance. The organic barley used for this whisky is grown using centuries-old farming knowledge – an understanding of how to work with nature rather than against it. These practices were once commonplace, but nearly lost following the widespread adoption of synthetic fertilisers and pesticides.
That return to natural balance is clear in the glass. This organic single malt is notably smooth and gently fruity, with soft sweetness and clarity on the palate. There’s no bitterness or burn from the alcohol, just a clean, poised spirit that lets the character of the barley and the care of its making shine through. Un-chill filtered to preserve texture and flavour, Highland Harvest is bottled in small, individually numbered batches, with cask numbers noted on each bottle – a quiet mark of transparency and craft.
About the Estate
The Organic Spirits Company began in 1994 and their initial products, including their Juniper Green Gin, the world’s first organic gin, were launched in 1999. Distilled with care in the heart of London, their award-winning spirits are Soil Association certified, and in 2007 the company received a Royal Warrant from HRH The Prince of Wales.

We were looking for an organic whisky and liked the sound of this one. We didn't like the taste and didn't not find it smooth as described and imagined this is what fire water tastes like as it has a real burn.
